What is Piquette and why did we want to make it?? Piquette is a beverage drank by French farm workers centuries ago, who made a ‘second wine’ from pomace. It is a naturally low alcohol and spritzy beverage. We took grape pomace, added water, partially fermenting wine and sugar. We heard about it, loved the idea and wanted to try it!

Piquette Blanc 2020 $16/bottle
Schonberger pomace was rehydrated with water and left to macerate about 14 days and then pressed off. Semi fermented gewurztraminer was added to co-ferment and then it was bottled just before fermentation was finished to capture natural bubbles!
Tart, citrus, apricot and hibiscus.
Piquette Rouge 2020 $16/bottle
Cabernet franc pomace was rehydrated with water and left to macerate for about 7 days. We added honey and sugar and bottled just before fermentation was finished to capture natural bubbles.
Light, spritzy, watermelon and bubble gum.
